Ingredients:
-1 cup medjool dates, pitted
-1/2 cup oat flour
-1/4 cup cocoa or cacao powder(for those of you who don’t lika da chocolate, use 1/4 cup whole raw cashews instead, combined with the other ingredients this will give it rich, caramel flavor! Add a splash of vanilla extract if you prefer as well<3)
-2 tbsps creamy PB(can sub cashew or almond butter as well)
-1 tbsp agave nectar(add a bit extra if your nut butter wasn’t very creamy)
-opt:coconut flakes, chopped almonds for rolling in after balls are made.
Directions:
1. Add all ingredients to a food processor & combine until well incorporated, with a crumbly texture.
2. Using a cookie scoop will help with rolling them but can also be done by taking a tablespoon to scoop out mixture. You want the balls to be about 1 1/2 -2 tbsps in size. The mixture is crumbly but easily sticks together. [Prepare to get a little messy as you’ll use your hands to roll the balls up]
3. Once prepared, roll in desired toppings & refrigerate them for 20-30 minutes or until hardened.
*These energy-packed snacks are perfect to take with you to work or keep prepped for when you’re on-the-go, or if you simply would like to reach for something healthier but just as delicious as a chocolate bar when your sweet tooth strikes!
*Get Creative with these! One of the things I LOVE about eating healthy is it allows you to get soo creative in the kitchen vs. buying things pre-packaged at the store(though I can appreciate the convenience of these items!) These balls only take a 10-15 minutes to make! You can add a drop of peppermint flavor or use an edible essential oil like Doterra for a Minty Choc flavor or put an almond in the center & roll in coconut shreds for an “almond joy” type of flavor, roll in any type of chopped or processed nuts or seeds you prefer!
