1 sweet potato, sliced w/ mandolin
1 tbsp nondairy milk
1 tsp cinnamon
1 tsp coconut sugar
4 strawberries, sliced
1/2 ripe banana, sliced
1 tbsp vegan chocolate chips(i used the enjoy life brand)
Other toppings are coconut flakes, caramel date sauce, peanut butter, apples or whatever your heart desires!
Preheat oven to 450 degrees Fahrenheit. In a medium bowl, combine sweet potato slices with sugar, milk & cinnamon. Use hands to coat thoroughly. Lay them out on a parchment lined baking sheet. Bake for 25-30 minutes, flipping half way through. Allow them to cool. Then plate, add toppings & enjoy for breakfast on the weekend or as a healthy dessert!
