Purple Sweet Potato Toast

Ingredients:

1 japanese sweet potato
2 tbsps hummus
1 tbsp peanut butter or nut butter of your choice
1 tbsp jelly of choice
2 tbsps vegan nutella (2 tbsps peanut butter, 1 tbsp cocoa powder& 2 tsps pure maple syrup or agave, combined)
toppings on hummus; red bell pepper, avocado and chives
toppings on pb&j; chia seeds and banana slices
toppings on vegan nutella; sliced apples and kiwi, nondairy chocolate chips

Preheat oven to 350 degrees Fahrenheit. Carefully, cut potato length-wise into 3 slices and lay out on a parchment lined baking sheet. Bake for 25-30 minutes, remove & place in toaster oven or regular toaster for 5-10 minutes or until tender and lightly browned. Add desired toppings & enjoy! You can get creative with the toppings and make only sweet or savory, or mix it up and try both! This is great for switching up your usual healthy snack options and so delicious!
