Gluten free Veggie Stir Fry

Ingredients:

1 tsp sesame oil
1 tsp ginger, minced
1/2 red bell pepper, sliced
1/2 large carrot, shredded
1/2 cup broccoli, chopped
1 medium zucchini, spiralized
4 oz. rice noodles

Stir fry sauce;
1/3 cup coconut aminos or tamari
juice of 1/4 lime
1/2 tsp sriracha, opt
1/4 tsp garlic powder

Optional toppings; avocado, sesame seeds or cilantro

Boil rice noodles until soft, drain & set aside. In small bowl, combine sauce ingredients. In medium skillet, saute sesame oil with minced ginger. After about a minute, add in red bell pepper, carrot & broccoli. Cover and steam for 4-5 minutes, adding water if pan becomes dry. When veggies are softened, pour in sauce, noodles & spiralized zucchini. Combine well and allow to heat through for 2-3 minutes. Serve with desired toppings & enjoy!
