Curry Potato & Kale Wraps with Creamy ‘Honey’ Mustard Sauce


Whole grain or gluten free wraps
1/4 avocado, sliced(opt)
2 russet potatoes, boiled or steamed
1 1/2 cups kale, chopped & massage w/lemon juice & himalayan salt
1/2 cup broccoli (or cauliflower), chopped & steamed
1 tbsp nutritional yeast
1 tsp cumin powder
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp turmeric
1/8 tsp each of coriander, ginger powder, cardamom, himalayan salt
A pinch of ground cloves, cinnamon, black pepper

2 tbsps hummus , garlic or original
2 tsp dijon mustard
2 tsp pure maple syrup or agave

In medium bowl, add sauce ingredients & combine well. Then incorporate potatoes, broccoli or cauliflower and seasonings. To assemble wraps, layer avocado, massaged kale & potato mixture, wrap up like a burrito & enjoy! This makes 2-4 servings, depending on the size of your wraps!
