Crispy Potato Skins


1 tbsp olive oil
4 medium russet potatoes
2-3 slices of Follow Your Heart american style cheese or other vegan cheese of choice
2 slices of Benevolent Bacon(not gf), baked & crumbled into bits or make coconut bacon
Other toppings; vegan sour cream & chives or for a pizza version; top with vegan shredded mozzarella & marinara

Preheat oven to 375 degrees Fahrenheit. In large pot, boil salted water. Halve potatoes length-wise & boil them for 10 minutes. Remove from pot and allow to cool, about 10 minutes. Gently scoop out insides leaving 1/4 inch potato in skins. (Store insides for mashed potatoes later on!) Lightly oil skins & bake on parchment lined baking sheet for 10 minutes, then adjust oven temperature to broil and cook until they become crispy, make sure to keep an eye on them so they don’t over cook. When crispy, remove from heat to add cheese. Broil again for just until the cheese melts. Then remove from heat, add the rest of your desired toppings and enjoy!! This is a great recipe for game night!
